Chicago Restaurants Promote Sustainability

Organic food may have taken a hit recently, with many arguing that it adds no nutritional benefit at all, but in Illinois, restaurateurs are going a little further than organics in search of the eco-dollar. Chicago restaurants are adopting a series of standards that will allow them to display a "Guaranteed Green" symbol, and show off their sustainable food credentials. The status requires them to adhere to sustainable and environmentally friendly practices:

The goals of The Green Chicago Restaurant Co-op are to:

— Identify and provide information about local sources of sustainable products and services.
— Provide members with opportunities to easily purchase environmentally preferable products at a cost-competitive price, as compared to traditional products.

I'm glad they aren't making a blind commitment to local food (food miles aren't the be all and end all) and it's encouraging to see that they accept sustainable practices must be available at a cost-competitive price in order for the co-op to stand a chance of succeeding.
