Chocolate Overload

I'm not much of a cook, but I do enjoy baking. Lately, I've been trying to master the chocolate chip cookie and I use all the Fair Trade ingredients I can find. People seem to be fans of my cookies. I think it's because there are alot of chocolate chips in it. I just finished making a batch of the chocolatiest chocolate chip cookies yet. Chocolate overload. But, that's  good thing.

While waiting for the cookies to cool, I started reading this NY Times article that my friend actually sent me. It's like she knew I was going to spend my evening dealing with chocolate. It's an article about 'responsible chocolate'. The author explores the different organic, Fair Trade and Rainforest Alliance chocolate bars out on store shelves. She attempts to disprove her own theory that Organic chocolate tastes terrible by doing a side-by-side tasting of different chocolates. Think of wine tasting, but with chocolate. Check out her conclusions.

For further reading, the author also wrote an interesting article about Kallari, indigenous cacao farmers in Ecuador. Although, not Fair Trade Certified, the Kallari cooperative are self-taught chocolate makers and have successfully been able to market their chocolate internationally. I haven't tasted the chocolate myself, but the author gives them high marks on taste. Now, off to search for a Kallari bar.
