GO VEGAN Days: Vegan Nacho Cheese
Think vegans never get to eat nachos again after making the switch? Oh, how wrong you are! Some lazy vegans (like me) resort to melting Follow Your Heart vegan nacho cheese periodically, but this homemade nacho cheese from the Happy Herbivore is an even better option! (And if you're new to this vegan thing, and you're confused by the inclusion of cashews in this recipe, you'll be pleasantly surprised at what yummy, cheesy creations you can make with the help of raw cashews!) Behold, the Happy Herbivore's cholesterol- and cruelty-free nacho cheese (recipe, originally posted here, after the jump):

Vegan Nacho Cheese (makes approx. 3/4 cup)
1/4 cup raw cashews
2 tbsp Red Star nutritional yeast
1/2 tsp onion powder
1/2 tsp salt
2/3 cup soy milk
2 tsp yellow miso
1/2 tsp fresh lemon juice
2 tsp cornstarch or arrowroot
1/2 roasted red bell pepper (about 1/4 cup)
1/2 tsp ground cumin
1/4 tsp black pepper or to taste
pinch of cayenne powder - optional
Directions:
- Blend in food processor for 3 minutes, until smooth
- Over medium heat, bring to a boil
- Cook until thick
