Milk Was a Bad Choice: Why Farm Food We Can't Digest?

Considering its environmental impact, we can do without milk, right? Add to that the news that up to 60% of adults can't digest milk, and I'm starting to think that sustainability isn't just about reducing impact, but where possible completely cutting food from our diets. But for as long as people drink milk, we should make sure it's produced as sustainably as possible. One dairy farm in Vermont creates energy from cow poop that it sells to local businesses, giving the farm an apparent zero-carbon footprint.

Sustainable Food guest blogger Greg Plotkin recently wrote how his farm is a place "Where Dairy Isn't Cruel," with the post attracting a massive 156 comments. We'll have a post later this week following up on some of the issues raised in that interesting comment thread.
