Oh, Wise Vegan Foodies, Lend Us Your Expertise

Mexican Vegetable Stew from Show Me Vegan

A few weeks ago, a reader contacted me via private message with a question. But like most of the many messages and e-mails I receive these days, it was quickly buried underneath new messages, and I never got around to responding. (Note: if you fall into the group of readers who've sent messages to which I haven't responded, please don't take it personally--I'm just perpetually overwhelmed, and I don't have time to respond to everyone.)

Here's the gist of this fella's situation: He wants to cut back on his animal consumption, but he lives with a group of friends who all cook together, and the friends aren't so keen on kicking animal flesh out of the meals. So the reader wanted to know if I could "recommend any resources for veggie/vegan 'transition' meals."

Why, yes, I can. But because I'm so late in responding, and I'm notoriously not-picky, I want to ask other vegan readers to chime in with their thoughts here too. Given how long I've made this reader wait, the least we can do is give him some great, varied suggestions, right? Leave your tips in the comments, vegan foodies! I'll later gather the responses into a separate post.
