Safe Fish

Confit of Ocean Trout & Konbu; by GoosmurfIf there are any fish left forty years from now, they'll have moved 125 miles from their original habitat areas due to warming waters. Tropical regions are likely to suffer the most as fish flee either North or South in search of cooler seas.

The fish that are swimming our fresh and salt waters today may be contaminated with mercury, poly-chlorinated biphenols (PCB), perfluorooctonate sulfate (PFOS), more PCBs and sometimes botulism.

But fish is delicious. So if you'd still like to enjoy it in spite of all the hazards, Food & Water Watch has compiled a Fish & Tips, a guide that includes several delicious recipes and, importantly, a guide to the fish that are the safest and most sustainably caught.

I'm particularly keen to try the San Francisco fish stew.
